Pectin is a structural polysaccharide found in the primary cell walls of terrestrial plants. It was first isolated and described in 1825 by Henri Braconnot. It is commercially produced as a white to light brown powder, mainly extracted from citrus fruits. It is used as a thickener in the food industry, particularly in the production of jams and jellies. It is also used as a stabilizer and source of fiber in fillings, candies, fruit juices, and dairy products.

Pectin is a natural part of human food but does not have significant nutritional value. The daily intake of pectin from fruits and vegetables is about 5g with a consumption of 500g of plant-based food.

Pectin passes through the small intestine mostly unchanged chemically, making it one of the most effective bulk-forming agents.
